Cheesy Oaty Squares
(Serves 12 – or cut in to smaller, bite size pieces to serve more)
Preparation time: 20 minutes
Cooking time: 20 – 30 minutes

  • Drizzle of oil
  • 1 onion finely diced or sliced
  • 175g/6oz grated carrot (approx. 2 medium carrots)
  • 150g/5oz oats
  • 150g/5oz grated cheese
  • 1 egg
  • 1 tbsp tomato puree
  • Optional – 1 tsp soy sauce or marmite
  • Optional – 1 or 2 cloves finely chopped (or grated) garlic,

  1. Pre-heat oven to 170ºC/325ºF/gas 3
  2. Line oven tray with baking parchment or brush it with a little oil
  3. Fry onions and garlic in oil over a low heat until soft
  4. Mix cheese, carrots and oats then add the onions/garlic
  5. Crack the egg in to the mixture and add soy sauce/marmite, tomato puree and any other chosen optional ingredients
  6. Press in to the oven tray and sprinkle with sesame seeds if using
  7. Bake for 20-30 minutes until browned
  8. Cut in to squares and enjoy eating warm or cold

Swaps and additions: You can easily swap the carrots for other root veg – our favourites are sweet potato or beetroot. Also try these optional flavours – 1 tbsp sesame seeds, black pepper, chilli, fresh or dried chopped herbs, finely chopped fresh peppers.

Serving suggestions: Eat bite size squares as a savoury snack instead of crisps – the oats release energy slowly and fill you up for longer
